We just wrapped up week two of whole30 and so far, so good! I did have a little bit of food boredom set in, so I'm excited to switch it up this week and make some recipes I've never made before, as well as rotate in some new veggies and change out our ol' trusty ones (broccoli, green beans and asparagus forever and ever amen.) So far the big wins are not craving sugar so intensely anymore, drinking my coffee black, way less snacking in between meals and my skin is looking a lot clearer! I don't notice the energy boost yet, but I also am not drinking nearly enough water and am not in control of my sleep schedule (babies, amiright?!) but I definitely notice a huge shift in my thinking, and I'm grateful.
Here's what we ate during week 2:
- turkey burgers with french fries
- lemon dill baked salmon with green beans and rosemary potatoes
- carne asada tacos
- spaghetti squash with chicken and asparagus
- pork chops with roasted broccoli and rosemary potatoes
- spicy chicken tortilla soup (minus the tortillas)
- BBQ pulled pork (using Tessemae's BBQ sauce) - I especially loved putting it in a sweet potato. So filling!
- sweet potato sausage bake
- paleo granola
- prosciutto wrapped frittata muffins
- fried eggs
- apple + almond butter
- veggies + homemade ranch
- hard-boiled eggs
- sweet potato chips
- unsweetened applesauce
And, I know "treats" are technically a no-no, but what can I say, I'm a renegade whole30-er ;) I made these date cookies and they were so good. I omitted the vanilla, and added a teaspoon of cacao powder, 1/4 cup of cacao nibs and a handful of unsweetened coconut flakes. They were SO GOOD. And it reinforces that I do not need an entire pan of brownies to hit the spot. These are healthy with just a touch of natural sweetness, and really hit the spot. We also made a banana bowl, which was so, so good.
Banana bowl: combine banana slices, unsweetened coconut, sliced almonds, a scoop of almond butter and cacao nibs in a bowl. Enjoy! I bet the banana would be extra-delicious if it were slightly frozen, too.
I'm so proud of my husband and I for taking this on, and being halfway through as of today! Really excited to see how this changes our food perspective longterm :) xoxo!
